Banana Bread
1/4 cup oil (I used avocado oil)
3/4 to 1 cup of sugar (use 3/4 if you have very ripe bananas or if you like your bread with just a hint of sweetness)
2 eggs
1/2 cup plain yogurt
2 medium sized bananas, mashed (but not pureed)
1 1/4 cup sprouted wheat flour (or just plain flour)
1/2 cup almond meal
1 1/8 tsp baking soda
1 1/8 tsp baking powder
pinch of salt
Preheat oven to 350 degrees.
Beat first 6 ingredient together. Stir in remaining dry ingredients. Do not over mix. Place in loaf pan and bake for 50 minutes.
