Orange Almond Cake

I had all this pulp leftover from juicing a batch of cara cara oranges (because they were a little too sour for eating straight). Rather than throw the pulp away, I thought I would use it to make a cake for the next morning's breakfast. Roden's recipe calls for boiling two oranges and then processing them into puree. Since I was trying to use the leftover orange pulp, I pureed the pulp I had in a food processor, and tossed in half a cut orange (I thought having some rind and extra juice was important). The result was light, spongey, and utterly delicious. 

Ingredients:

About one cup worth of orange pulp from juicing (or just two oranges). If pulp looks dry, add half an unpeeled orange to the lot. 

6 eggs

1/2 lb almond meal/flour

1/2 lb sugar

1 tsp baking powder

Line the bottom of a 9" baking tin with parchment paper. (Cut out just a 9" round or tuck in a piece of parchment as shown in picture).

Put into large bowl the almond meal and baking powder. Stir around to mix. 

Put the orange pulp (and 1/2 orange if using) into the bowl of processor and process till pureed (it doesn't have to be super fine, it is ok for it to still have little bits of peel). 

Scoop out the orange puree. 

Add 6 eggs to the bowl of the processor and process for a good few minutes. It will become pale and fluffy looking. I have done this a few times, the longer you process the eggs, the lighter the cake. 

Add sugar and continue processing. Then add the orange pulp and process for maybe 10 seconds. 

Stop the processor and pour the mixture into the bowl with the almond meal/flour. Stir to combine completely. Don't overdo it. Alternatively, if your processor has big enough a capacity, and the almond meal directly to the processor bowl and blitz it for a few seconds to mix.

Pour into prepared pan and bake at 400 degrees for 45 minutes to 1 hour. (Note that I used a smaller countertop oven and had to lower temperature to 375).
