Linguine with Clam Sauce

This is a great recipe. I think it is very important to buy good clams. My favorite brand is Snow's. The clams are tasty and plump. I learned the hard way the importance of good clams. One time, I bought canned clams from Trader Joe's and the result was quite insipid; there was hardly any ocean in it. I love Trader Joe's and that was a rare occasion where I was let down by a product carried by Trader Joe's.

1 onion, chopped
6 to 8 cloves of garlic, smashed and chopped fine
5 tbs olive oil
4 cans of chopped clams
approximately 2 tbs of butter
2 to 3 tbs of white wine
Sprigs of fresh basil
Parsley chopped as garnish

Drain clams, reserving the juice. In a large skillet, saute onion and garlic in olive oil. When onion is soft (but not browned), stir in clams, half of the clam juice, butter, wine and basil. Simmer until sauce has reduced by 1/3, about 20 minutes. Serve over linguine.


This is a great make ahead and freeze dish for camping. Alternatively, it can be prepared at campsite easily.
